Maya Grill and Cantina: Breakfast Until 3p and Attentive Service with a Smile

Can Carbon Valley handle another Mexican Restaurant? Absolutely, especially with good food and service that is delivered with a smile. Firestone’s newest restaurant is open and providing three meals a day, seven days a week. Breakfast is served until three o’clock!
Skillets, omelets, burritos and traditional options in both Mexican and American are available. Fire roasted red and green bell peppers, onions, mushrooms, plus chorizo, bacon, sausage, AND ham, are in the Maya Ultimate Omelet…sounds delicious and filling!
The relaxed and pleasant atmosphere calmed us along with the joyful spirit of our server. One reviewer stated, “Delicious food, kind, hardworking people! Highly recommended, always support local small businesses! A lot of hard work and money was put into this place and their beautiful interior shows!” I have to agree 100%.
This facility started out as a hair and nail salon and several restaurants followed. I’ve been in each business. The renovation here is quite nice and the best by far. They have a separate full bar available for those waiting for tables or who just want a cocktail and it is beautiful.
Our food, shrimp and chicken fajitas and a chicken burrito, was prompt, hot and delicious! Our beverages were also very tasty. The chips and salsa were plentiful.
As dinner was wrapping up, we had the privilege of meeting the owners; brothers Alberto and Tomas (Alberto Jr. was not present). We had a delightful visit with each of them and found that my husband had many mutual friends since they all are from the Longmont area. They have another long-time business in Longmont that my husband is familiar with, Longmont Auto Body.
On another occasion I ordered the Maya Special; a three meat entrée. The chicken and steak cut easily with my fork and the shrimp was plump and delectable. My husband, Mike, said, “The chili relleno was the best I’ve ever eaten.”
Mark your calendar for May, 5 which is Cinco de Mayo, the day of celebrating the victory of Mexican forces over the French army. Cinco de Mayo is a holiday that combines tradition, history and a lot of fun into a celebration that is filled with plenty of icy cold margaritas, spicy food, upbeat music and colorful clothing.
As the weather stays warmer, longer, watch for an announcement that Maya Grill and Cantina has invited Aztec Dancers to perform. This event is outdoors and promises to be entertaining for the whole family.
As for the children, Maya Grill offers a Monday special that kids eat free; one child per paying adult gets a free child’s meal. That special runs all day so take them to breakfast too!
My husband said, “If I had one request, it would be larger margaritas!”
